Mike Yi, an Eggbred franchisee who was initially eyeing Costa Mesa and Yorba Linda will instead be opening up shop in Placentia, at 1085 E Imperial Hwy, “[hopefully] in the next six months or so,” according to CEO Albert Shim.

Yi did not immediately return a request for comment.
Before founding Eggbred, Shim had spent some 17 years owning and operating various food trucks. In 2020, Shim opened the first Eggbred, where he put a “delicious twist on traditional breakfast sandwiches,” according to the company’s website.
Despite only being open a few years, Shim has already begun franchising the concept, with a location coming soon to Long Beach, according to the company’s website, as well as Huntington Beach, which What Now Orange County reported yesterday, May 24.
While boozy brunch joints are becoming increasingly popular, Eggbred is carving its place out in the field of quick-service brunch.
“We specialize in craft breakfast sandwiches with an emphasis on house recipe proteins like breakfast sausage and chorizo, ribeye, and fried chicken, utilizing local bakery milk buns and custom-crafted English muffins, avocado toast, shareables, and chef-driven sides,” Shim told What Now Orange County earlier this week.
A menu of signature breakfast sandwiches includes the Scramble Me Softly made with chives, caramelized onions, sharp cheddar, and smoked paprika spread, as well as The Ben Franklin topped with black forest ham, truffle-dressed arugula, over-medium egg, and a side of classic hollandaise sauce.
Meanwhile, a lunch menu features a Nashville hot chicken sandwich appropriately dubbed The Nashville Hottie, a Truffle Crunch Burger, Ribeye Steak & Egg sandwich, and the namesake Eggbred Cheeseburger.
However, if sandwiches aren’t your style, Eggbred’s dedicated “not sandwich” brunch menu includes Breakfast Poutine, Avocado Toast, Chorizo Chili Cheese Hash, Benny on the Rocks, and a Build A Benny option.
