Expanding its presence to Eastvale, EggBred, a breakfast and brunch franchise, is opening under franchisee Rey Umali.

The company is led by CEO Albert Shim — a distinguished chef featured on platforms like Chopped, ABC, and the Travel Channel. Despite the challenges of 2020’s COVID-19, Shim created the first EggBred location in La Habra, California. Now, as the franchise model takes root, his vision extends to nationwide expansion.

What Now Orange County reached out to CEO Shim, who revealed that franchisee Umali recently signed on and is now going through the real estate and site selection process.

The menu at EggBred features craft breakfast sandwiches, cage-free eggs, avocado toast, loaded-battered potatoes, fair trade specialty coffee, cold-pressed juices, and an array of sauces prepared from scratch. The lunch offerings include sandwiches such as ribeye steak and egg, buttermilk chicken, and a truffle burger. Rooted in community, the fast casual restaurant sources ingredients from local businesses and artisan bakeries, including eggs, meats, milk buns, and English muffins.

Central to their philosophy is a commitment to delivering quality food, fostering a positive environment, and establishing convenient locations. Their website summarizes their ethos as “quality ingredients, made from scratch, freshly cooked, handcrafted, consistent, and served with a smile!”
