Peruvian-Japanese Sushi Concept, Akashiro, to Open in Fullerton This Fall

The full-service restaurant, billed as ‘elegant casual,’ comes courtesy of the team behind Peruvian-Japanese bakery, Higo, in La Habra.

Akashiro, a new Peruvian-Japanese sushi concept, is set to open at 444 N Harbor Blvd in Fullerton this fall, according to co-owner Manuel Tam, who also operates a Peruvian-Japanese bakery, Higo, in La Habra.

Tam, who will be opening Akashiro with partners Diego Kanashiro and Richard Galla, tells What Now Orange County, “We’re very excited to bring a fusion like this to Fullerton. Flavors and presentations will be unique and non-traditional with our special touch. We’re working on a lot of details in order to provide an amazing experience for our guests.”

The full-service restaurant, which Tam describes as “elegant casual,” will specialize in Nikkei sushi, with signature menu items such as Peruvian ceviche and tiradito, a Peruvian spin on sashimi.

Tam says that depending on permitting, the restaurant should be open in three to four months.
