Paseo is set to hit Anaheim’s Downtown Disney sometime this year. The brainchild of Michelin-starred Chef Carlos Gaytán, the eatery will emerge on the culinary scene at the commercial hub at 1580 Disneyland Dr #106.

The establishment promises a multi-sensory journey of Mexican cuisine and a celebration of the culture. Gaytán’s carefully curated menu focuses on delicate flavors and zesty dishes, inspired by his upbringing in Mexico and recipes his mother taught him. 

Inside, Paseo’s ambiance will incorporate rich wood, leather, greenery, and native accents. The company states on its website that it will have a space to host private events, and to contact the sales team for more information. 

Paseo (and its accompanying cocktail concept Céntrico), is taking over the area where Catal & Uva Bar once stood. Permits filed with the city show the business is seeking to expand the dining space into a neighboring shell, add new bar space, and put up trellises.
