Local Chef and Restaurant Consultant, Marco Criscuolo, to Open Flagship Concept

The Italian restaurant, dubbed Trattoria Trullo, is bound for Aliso Viejo Town Center, in a unit adjacent to Sgt. Pepperoni’s Pizza Store.

Local chef, Marco Criscuolo, is set to open a flagship concept dubbed Trattoria Trullo at the Aliso Viejo Town Center at 26611 Aliso Creek Rd, in a unit adjacent to Sgt. Pepperoni’s Pizza Store, according to a liquor license recently filed with Orange County’s Santa Ana office.

“I look forward to opening Trattoria Trullo this fall. My restaurant will be focused on fresh pasta dishes inspired by my family and hometown recipes from the region of Puglia,” Criscuolo tells What Now Orange County, adding, “I am excited to serve the community of Aliso Viejo soon! “

While Trattoria Trullo appears to be Criscuolo’s first solo venture, however, the newly-christened restaurateur comes from an illustrious career, with stints as Executive Sous Chef at The Resort at Pelican Hill and Andrea Ristorante, as well as time spent at Bacara Resort and Spa and with the Four Seasons in Sydney, Australia and Santa Barbara, according to his LinkedIn page

It was in 2018 that Criscuolo embarked on a career as a private chef, while also offering cooking classes, food styling, and restaurant consulting services, according to a professional website.  

“In his family’s kitchen in Puglia, Italy, Chef Marco made some of his fondest childhood memories helping his mother prepare his favorite dishes,” Criscuolo’s website reads. “In her kitchen, he learned to cook by the ‘golden rule’ of treating the ingredients with respect – storing, preparing, and enjoying each morsel as a thoughtful component of each dish.”
