Pastalia Opening First Brick-and-Mortar In Orange County

Christian and Adriana Gorgicze have been serving their fresh, homemade pasta to customers around Orange County for the past 10 years, selling their Italian products at farmer’s markets across the county.

Now, they are opening a brick-and-mortar location under the name Pastalia at the River Street Marketplace development heading to San Juan Capistrano this year.

The spot will open alongside other tenants like Capas Taco, The Sushi Stand, Hudson’s Cookies, Kozan Teahouse, Bred Hot Chicken, Shootz and Kebab Craft at the Rodeo River Street food court within the marketplace.

“We’ve been around for a while,” Christian said. “My family and I were always dreaming about a little location we can open up, like a mini pasta shop, to not only sell pre-packaged, but also fresh, homemade pasta.”

The Gorgiczes focus on organic ingredients, using an organic Italian flour to make their pastas. They also offer gluten-free and vegan options.

Christian said the goal is to offer meals that families can enjoy, ranging from fresh pastas and a variety of raviolis to specialty Italian dishes. There will also be pre-packaged pasta items available for customers to buy. 

He envisions “kids having a nice bowl of spaghetti with their family” and a place where “people can buy their fresh ingredients for the weekend” at the River Street spot.

The Gorgiczes also hope to launch a new concept — pasta kits — as part of the Pastalia brand. These kits would allow customers to choose their pasta, sauce and cheese to buy and make at home.

“It will feel like you are going to a nice Italian restaurant without leaving the house,” Christian said. “That’s one of the things we would like to focus on.”

The timeline for Pastalia’s opening is dependent on the opening of the development. River Street Marketplace is aiming for a mid-October opening date, though Christian said it might be later. However, he expects them to be open by the end of this year at the latest.
