Capas Taco from chef Michael Campbell is seeking its first expansion from its location in Stanton at food hall Rodeo 39. It will be joining the tenant lineup for the River Street Marketplace, a new development that is aiming for an October opening, according to The Capistrano Dispatch. It will join the food hall, Rodeo River Street, inside the marketplace.

Capas Taco aims to offer authentic Mexican flavors to customers. The menu focuses on tacos and ceviches, offering signature dishes like smoked queso tacos and yellowtail ceviche. The menu also includes burritos, bowls and quesadillas, and it serves agua frescas for beverages.
The menu places an emphasis on locally sourced ingredients, including the fish and chiles, and it uses organic meats. Campbell combines these ingredients with high-quality cooking techniques in an effort to deliver an authentic Mexican experience.
Campbell has an extensive background in the restaurant business, working as a chef at local Orange County spots in Costa Mesa and Laguna Beach as well as a restaurant in Portland, Oregon, before returning to Southern California. He also has a catering company in Laguna Beach called Pacific Pearl Catering Co.
Capas Taco will join other tenants including Hudson’s Cookies, Kozan Teahouse, Bred Hot Chicken, Shootz and Kebab Craft at Rodeo River Street.
