This location is in the heart of downtown Anaheim in the upbeat and trendy new neighborhood called The Colony. Plans for a construction project were submitted to the county over the summer but were rejected, and subsequently resubmitted and then approved last week.

Started in 2018, Colossus Bread is a woman-owned bakery that focuses on “whole grain long fermented sourdough breads and seasonally inspired croissant pastries.” The croissants are made over a three-day period at the brand’s Long Beach space.

The business uses organic flours, organic eggs, local produce, and sustainable meat for its seasonal brunch and lunch menus, and its pizza night. Colossus Bread also has a full coffee bar in each location. It is a tipless concept that offers living wages to its employees.
