Former owners of The Filling Station Cafe to open new cafe

Juliette Cafe & Coffee Culture will open in the coming months in Newport Beach.

The former owners of Filling Station Cafe and Juliette’s Kitchen + Bar are planning on opening a new cafe this winter.

Juliette Chung and John Hughes will open Juliette Cafe & Coffee Culture in the coming months, Hughes told What Now.

Located in Newport Beach, the new restaurant is 3,500 square feet, with a 1,200 square foot patio space. There are plans to have both a coffee bar and a breakfast and lunch space separately, Hughes said.

Everything will be done in-house (from the roasting of the coffee to the baked goods).

“We’re connecting both the coffee culture and cafe culture,” Hughes said. “It’s really going to be geared towards community.”

The new location will feature a pollution control unit, and the roasting of coffee will be with a Bellwether all electric self contained roaster.

This is “to eliminate any pollution from the restaurant as much as possible,” Hughes said.

Hughes and Chung plan to combine the ambience of Juliette’s kitchen and the Filling Station in this new concept.

“it’s just going to be combining the two,” Hughes said. “Definitely upgrading the quality of the food to what we were doing at the dinner place. Just a higher quality breakfast and lunch that you can’t find in most places.”
