Bamboo Bistro is Expanding

A planning document filed with The City of Newport Beach details the Vietnamese eatery expanding into the space next door, with a remodel also in the works

Bamboo Bistro — a Vietnamese restaurant helmed by Chau Haller of Brodard and the more upscale Brodard Chateau — is expanding its venue to accommodate more customers.

According to a planning document detailing the project, Bamboo Bistro will experience an “expansion of [the] existing restaurant to the suite next door, suite 150; a remodel of the existing restaurant to ‘take-out limited’ with 6 seats;” and a newly available 20-seat maximum. 

The chic yet cozy eatery is situated on the rounded corner of 5th Avenue just off East Coast Highway in Corona Del Mar. The menu is a well-considered combination of creativity and authenticity, curated by Haller who is a licensed dietician by trade. 

Hellar, her mother, and sister — Diane Dang and Lisa Vo — are also responsible for the lauded Brodard eateries in Fountain Valley and Garden Grove, which have been praised repeatedly for their pork spring rolls.
